These quick and easy beef stuffed bell peppers make a great weeknight dinner for any size family, very healthy and simple to make. Everyone loves them!

I LOVE ground beef stuffed bell peppers.  I didn’t know I loved them until a couple years ago when I decided I needed to try some new things, and my mom had a recipe for them.  I love how you don’t just have to have stuffed bell peppers with ground beef and rice, though.  There are many varieties of stuffed green bell peppers you can try.

Easy Beef Stroganoff

Like the beef stroganoff, this beef stuffed bell peppers recipe is another very simple recipe and takes less than an hour to make so it is a great one to have in your weeknight meals. I also love that it is made with simple ingredients like tomato sauce you can get on sale!  And best of all, it cooks with water in my pyrex dish.  No fancy sauce to make.  Just whole ingredients in the pepper!

Beef Stuffed Bell Pepper Recipe

Beef Stuffed Bell Peppers Recipe

Ingredients
  • Four green bell peppers, tops cut off and seeds taken out
  • 2 Tablespoons olive oil
  • One medium onion chopped
  • 1 pound of ground beef
  • Two teaspoons garlic powder
  • 1/4 cup dried chopped parsley leaves
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • pinch of red pepper flakes
  • 3 cups cooked white rice
  • 15 oz can tomato sauce
  • water
Instructions
  1. Preheat oven to 350
  2. Cut off tops of peppers and chop the edible parts of the tops.
  3. Heat water in a large pot and parboil the peppers for 2 to 3 mins or until tender. Take out peppers and let sit on paper towels to dry
  4. in a skillet, heat olive oil and add onion and pepper tops to the pan and cook until soft
  5. Add beef, garlic, parsley, salt, pepper, and pepper flakes. Cook until meat is browned and crumbled
  6. Add rice and tomato sauce and stir well.
  7. Arrange peppers in baking dish and add water until about and 1/3 inch thick.
  8. Stuff peppers with rice and meat mixture until filling forms a slight dome above the edge of the pepper.
  9. Bake 25 to 30 mins or until peppers are tender
  10. remove from the oven and let rest for 10-15 mins before serving

    These bell peppers are great. I made my rice in the morning. Prepared the rest at dinner. Don’t leave out the garlic. It was not in the directions. If it is, I just did not see it. Had enough to fill 6 peppers.
    Filling was good by itself. Five stars!

    I’ve never made these before. Just curious…Why do you have to add water to the baking dish?

    1. Thank you for your comment. The water keeps the oven humid so the peppers are soft and don’t get a crust on them.

    super easy to make. I am sure could have made more than four with all the meat sauce it made. Next time I will use more peppers. About 8 of them at least . I hope it freezes well
