Healthy Caldo Xochitl Soup (Pretty Soup) Recipe

 

Since it has been REALLY cold here lately (like 43 degrees 😉 ) I thought I would make some Caldo Xochitl soup since I haven’t made in a while. This is one of my favorites soups to make from scratch!

Caldo Xochitl Recipe

This is actually a brazilian dish named Caldo Xochitl, but it means pretty soup and that is what we call it because there is no way we would be able to pronounce that… 😉

I was first introduced to Caldo Xochitl in Oregon while I was a missionary for my church.  I was having dinner at a families house who used to live in Brazil.  I fell in love with the amazing flavor and the lightness of the soup.  I told her I had to have the recipe.

What is Caldo Xochitl soup

Caldo Xochitl is a chicken soup recipe that you can add just about anything too.  It is great for large families or groups or to make for a smaller group and freeze some for later.

You can add whatever toppings your pallet wants. I like to add tomatoes, avocado, cilantro, and green onions.  Be creative with what you have and find your favorites!

My favorite part about it is that it a very healthy recipe and very simplistic.

Caldo Xochitl Soup Recipe

Ingredients

1 Whole Fryer Chicken or Rotisserie Chicken
2 Cloves of Garlic
1/4 Bunch of Cilantro Chopped if desired
1/2 tsp. black peppercorns
about 2 quarts of water
1 Medium Carrot
1 1/2 Cups Cooked Rice

For toppings:

Lime Wedges
Fresh Cilantro chopped
Serrano Chilies Chopped
Green Onions Chopped
Tomatoes Chopped
Avocado

 

Instructions

If using fryer chicken:
Simmer chicken and above ingredients for 1 hour
Remove chicken and let it cool then shred for topping
Take chicken off bones
Let broth cool and skim off fat

If using rotisserie chicken:
remove chicken meat from bones of chicken
Use remaining caracas to make the broth by placing it in the water with remaining ingredients for 1 hour
Shred chicken that was removed

Add chicken broth or bullion to increase flavor as needed
After broth is made:
Add carrots and simmer until tender
Serve in bowl with rice, chicken, and other desired toppings

    /me grabs a coat and heads out in to the negative nine degree morning, complete with freezing fog.

    Soup sounds good, by the way.

      1. A wool base layer makes it pretty comfortable. I only realized how cold it was a few days ago when I was doing laundry and all my long undies were in there.

        Walking to the next door down nearly froze me solid.

        Actually forgot to answer the question posed as well.

        Cheese, definitely cheese, possibly with a little sour cream and a good chunky homemade salsa.

        Depends on the salsa though, definitely not the Pace kind, but the kind my sister cans. Not sure if there’s any commercial brand that measures up.

        Still, with just cheese and sour cream it would be good.
