Copycat Chicken Bake Recipe: A Simple Meal For Two or More

Have you ever made this copycat chicken bake recipe?  When I was younger, I had to go off dairy for a while.  This meant no Costco chicken bakes.  However, I LOVED them.  So I had to make a way for me to get the same taste without the stuff I could not have.

This is a simple meal for two that is a great make ahead meal for those on the go times or quick dinners.  I love making these and freezing them for a later meal.  It is a great way to be healthier but still have lots of good taste and the convenience of freezer food.  This is great with carrots or chips.  Perfect for lunch on the go as well.

When you’re making this be sure you stretch the dough to what seems like too thin.  It gets thicker as it cooks and you want the balance to be right and not a bunch of bread with your chicken.  This is really good with the Homemade pesto recipe inside of the bake instead of the ranch.

Chicken Bake: A Simple Meal For Two

Ingredients:

1 1/4 cup all-purpose flour
1/2 cup Luke warm water
1 Tablespoon Yeast
1 tsp Salt
2 Tb Vegetable oil or butter
Mozzarella cheese to taste
1/4 C Bacon bits (fake or real is ok)
1/4 c Green onions, chopped
chicken strips
1/2 Tb ranch or Italian dressing

Directions:

  1. Preheat the oven to 400 Degrees Fahrenheit.
  2. Combine first set of ingredients and knead it into the dough. Let it sit to the side while you make the second part
  3. Combine the cheese, bacon bits, green onions, and chicken and mix it.
  4. Take the dough and split it into two equal parts and roll or stretch them out flat.
  5. Put ranch down the middle of the dough, then top with half of the filling mixture until heaping
  6. Roll dough up to make a pocket then pinch or slightly fold ends to seal them. Put them seal side down on a pan and sprinkle with more cheese.
  7. Bake in the oven until brown
