The Best Cranberry Orange Bread Recipe I Have ever Tasted

Cranberry orange bread has become an after holiday staple in our home.  It is the perfect combination of bitter and sweet and it is a great change to the usual sweet fruit bread I make.

Check out this easy recipe for Cranberry Orange Bread. This orange cranberry bread is a great breakfast or dessert bread. Made with crasins or craberries.

We LOVE breakfast bread like banana bread, zucchini bread and muffins as well.  We eat them weekly in our house.  It is a great way to use up those fruits you buy on clearance or after special occasions.

This cranberry orange bread is a great one to make ahead and freeze.  This bread freezes REALLY well.  It lasts us usually a month or 2 in the freezer and doesn’t become dry.  Because it uses orange juice instead of water or milk, the consistency of it doesn’t change much after it defrosts.

You can also chop up fresh cranberries and freeze them for making this later too so be sure you get enough cranberries for a couple batches since they are usually only sold once a year!

Here is how you can make this amazing bread to enjoy with your family.

Cranberry Orange Bread Recipe

  • 2 cups flour
  • 3/4 cup granulated sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped cranberries or 3/4 cup of dried cranberries
  • 3/4 cup orange juice
  • 1/4 cup canola oil
  • 1 egg, beaten
  • 3/4 Tbsp grated orange peel

Instructions:

  1. Pre-heat oven to 350°F.
  2. Mix together orange juice, sugar, butter, egg, and orange peel in a medium bowl.
  3. Mix the flour, baking powder, baking soda, and salt in a large mixing bowl. Add the chopped cranberries to coat with the flour mixture. (if you are not using fresh berries, you don’t add the cranberries here)
  4. Add to flour mixture and stir. Add cranberries if using dried cranberries and stir with a wooden spoon until just blended.
  5. Pour into a greased 9×5 or 8×4 loaf pan. Bake at 350°F for 55 to 60 minutes or until done (a toothpick inserted into the center comes out clean).
  6. Cool in pan for 10 minutes. Remove from pan and cool on a wire rack.
