The Best Stuffed Bell Peppers With Ground Turkey And Vegetables
One of my favorite recipes is stuffed bell peppers with ground turkey and vegetables! It has always been a dish that leaves me full but not heavy feeling. I also love that it gets me lots of vegetables!
We searched high and low for a vegetable and turkey stuffed peppers recipe. I tried a few but never LOVED what I was eating.
Then I found a recipe similar to this one and decided to switch up based on what I had in the fridge and it turned out great! I had never made a stuffed pepper like this before but I have always wanted a healthier stuffed pepper recipe.
Usually, my kids and husband are not so excited about stuffed pepper recipes because they are not crazy about the pepper consistency. But to my surprise, My husband said this is his favorite meat stuffed peppers recipe yet! I think it is a huge win because it has zucchini in it and that is not on his list of favorite veggies.
How to make stuffed peppers with ground turkey and vegetables
Ingredients
4 Bell peppers, any color
1lb of Ground turkey
2 T Olive oil
1 onion Chopped
1 bell pepper of a different color, chopped
2 small zucchini, chopped
1 can of diced tomatoes, liquid reserved
1 can Tomato paste
3 tsp Italian seasoning
1 T Garlic powder
Salt and pepper to taste
Directions
- Preheat oven to 350 degrees
- Cut tops off peppers and place standing in a baking dish
- In a skillet over medium heat, heat oil and add onions, zucchini, bell pepper, and ground turkey until turkey is browned.
- Mix in tomatoes, tomato paste, Italian seasoning, garlic powder, salt and pepper
- Scoop mixture into peppers until it is just over the top of the pepper.
- Combine remaining tomato paste with juice from the canned tomatoes and add water until thin enough to pour in pan around peppers. Pour into pan.
- Place in oven and cook for 20 mins.
